This is so frustrating, basically forces you into SEC-style oversigning + ruthless cutting. Always makes me feel bad, and then I feel stupid for feeling bad about cutting virtual players.

I miss the older games where you had the NCAA investigating the program. No idea why EA doesn't make it more realistic and make it to 85. Seems obvious and an easy fix.

I feel you. I end up in a ruthless situation where I cut almost any upperclassmen who aren't at least in the 2-deep, as well as a good percentage of my incoming class who just end up ranked lower than I expected, for whatever reason. It'd be much more realistic if you could actually have a full roster.
